To make the perfect Paneer Ghee Roast, you first need to make an onion and tomato paste. Then, bring the oil to high heat in a frying pan and toss in the paste when it’s hot. After cooking for a few minutes, you can add red chili powder and other spices as per taste. Now that the paste has been cooked, you need to add 2-3 tbsps of curd to balance the roast and a tbsp ghee with paneer. Now, add peas, carrots, beans, potatoes, and any seasonal vegetables you want to and mix them well for a minute. After that, you need to pour hot water and leave vegetables to bubble for some time.

While the vegetables are being cooked, you can mix cashew butter and Elmlea Double in a separate bowl. Once it is mixed properly, add it to the vegetables. And keep the flame low and stir while you add all spices you need.

To make the servings look as great as it tastes, garnish the dish with cashews, almonds, and raisins before serving. 

  • Veggie Balls dipped in Creamy Masala Sauce

Not a traditional Indian recipe, veggies balls dipped in creamy masala sauce make for scrumptious meals. But making this is a two-step process because you need to prepare the masala sauce and the veggie balls separately.

For the Masala Sauce, heat the oil in a large pan on medium heat. And then add onions, garlic, and ginger. After cooking for a few minutes, add finely chopped carrots, bell pepper, and tomatoes. Stir for few minutes before adding all spices. Now, add a cup of water and bring to boil. It is almost ready, just cover it and heat until vegetables are cooked. After removing from heat and cooling, use a blender to make a sauce and stir it in the yogurt. 

Now to make Veggie Balls, cook vegetables (onion, carrots, mushrooms, etc.) in oil and stir for a few minutes. In a food processor, add the cooked vegetables, beans, tomato paste, rolled oats, yeast, spices, and cooked rice. Process it till you get a soft and slightly chunky mixture.

Now, transfer this mixture into a big bowl and add oat flour. Mix until it gets smooth. Using your hand make 2tbsp size balls and place them on the prepared baking sheet. Bake for 13-15 minutes in the oven pre-heated to 350º F, turn halfway balls through baking.

Now, heat a tablespoon of oil and add baked veggie balls to the pan. Cook until it gets golden brown. Finally, pour masala sauce and cook on low-medium heat for another 5 minutes and the dish is ready to be served.

  •  Khatta Meetha Baingan

Another dish with delectable taste, Khatta Meetha Baingan is an amazing choice for a celebratory dinner. 

First, let the oven preheat oven to 200º C. Then, cut the brinjals into 4 slices and soak them in ice-cold water that has a teaspoon of salt. 

After half an hour, drain and wipe dry the brinjals. Next, take a teaspoon of oil and spread it over the brinjals before baking them for 10 minutes. As they are being cooked, bring the remaining oil to heat on high flame and add asafetida (heeng). Next, it’s the turn to add the brinjals, some green chillis, and a little bit of tamarind paste to the pan before covering it for 10 minutes. Finally, add salt as per your taste and your Khatta Meetha Baingan is ready to be devoured.
